La Quercia Tamworth Country Cured Bacon
What do you do when you get meat from a breed known as the "Bacon Pig?" Make bacon. Ours is dry cured so you can eat it with or without cooking. The meat is exceptionally sweet--no sugar of any kind, no nitrites, just old fashioned "Country Cured." It took us 4 years, but we were finally able to get a regular supply of meat from these Tamworth hogs--considered a "threatened" breed.
